Slow lunch Fridays: how hybrid work changed the lunch trade and what to do
Slow lunch Fridays since hybrid work? Measure the drop in your POS data, adapt Friday prep and menu, keep office regulars and win guests who work from home.

Why is Friday lunch so slow? Many companies now work hybrid, and people often take their home days at the end of the week, so the offices around you are half empty on Mondays and Fridays. The fix has four steps: measure how far Friday drops in your POS data, adjust prep and the menu to it, reward the office regulars who still come with a lunch stamp card, and on Fridays focus on the people who live nearby or work from home.
Below is the plan step by step, with a worked example and ideas for Friday.
Why offices are empty on Fridays
Hybrid work means people go to the office two or three days a week and work from home the rest. Which days they pick is not random:
- Teams agree on shared days. Meetings cluster in the middle of the week, when everyone is in.
- Friday and Monday stretch the weekend. People with a long commute save the trip at the edges of the week.
- Fridays have fewer meetings. People finish work that only needs a laptop at home.
- Family duties. School pickups, leaving early for the weekend, visiting family.
You see the result in your own dining room: Tuesday to Thursday busy, Monday weaker, Friday empty. It is not the same everywhere. If you are surrounded by public offices, a hospital, a factory or shops, where people cannot work from home, your Friday may look completely different. So start by measuring.
How to measure the Friday drop in your POS data
A feeling that "Fridays are dead" is not enough. You need to know by how much, so you know how much to cook and how many people to put on the shift.
- Export receipts for the last eight weeks from your POS by weekday and hour, lunch time only, for example 11:00 to 14:00.
- Work out the average number of lunch receipts for each day. Eight weeks smooth out holidays and time off.
- Separate the set lunch from à la carte and takeaway. Often only the set lunch falls while takeaway holds up.
- Look at waste. How many portions are left over or thrown away on Fridays.
- If you run a loyalty card, compare how many stamps are added on Friday and on Tuesday. You will see whether you are missing new guests or regulars.
Friday drop = 1 − (Friday lunch receipts ÷ average lunch receipts Tuesday to Thursday)
Example with round numbers: a restaurant serves 120 lunches a day on average from Tuesday to Thursday, and 72 on Friday. The Friday drop is 1 − (72 ÷ 120) = 40%. If the kitchen cooks on Friday as it does on Tuesday, it has 48 portions too many. At €3 of cost per portion, that is €144 every Friday, about €600 a month. These are illustrative numbers, not data from a real business.
How to adjust Friday
An empty Friday is not a reason to panic, it is a reason for a different Friday. Save first, then add a reason to come.
- Cook for Friday, not for Tuesday. Prepare fewer portions and pick dishes for Friday that you can finish to order: soup, stew, risotto, pasta.
- A smaller Friday menu. Two dishes instead of four. Guests decide faster and the kitchen throws away less.
- Staff by the numbers. Fewer people on the Friday lunch shift, or use them for weekend prep.
- A different Friday dish. Something worth leaving the house for: a dish you do not cook during the week, a family style dish, a Friday dessert.
- Takeaway and pick up. Orders by phone or message until 10:30, pick up without waiting. If you deliver through a delivery app, work out your margin after its fees.
- Dinner to take home. On Friday afternoon many people do not want to cook. Soup and a main course packed to reheat can sell what would otherwise be left over.
A Friday offer for neighbours, not offices
The people missing on Friday are at home. The ones who stay are your neighbours and people who cannot work from home: retirees, parents on leave, tradespeople, staff of nearby shops, healthcare workers, public office staff.
- Retirees: a smaller portion at a lower price, a calm time after 13:00.
- Parents with children: a kids' portion, room for a pram, a Friday lunch after nursery.
- Tradespeople and workers: fast food to take away, a big portion.
- Staff of nearby shops and clinics: a pick up order that one person collects for everyone.
Tell them about it in person. A flyer in the entrances of nearby blocks and in the shops next door does more than a social media ad.
How to keep the office regulars who still come
The people who come to the office even on Friday are the core of your lunch trade. Losing them would cost more than anything else in this guide.
- A lunch stamp card. A stamp for every lunch and a dessert or coffee after ten. Keep the reward cheap for you and valuable to the guest, and stamp at payment so the noon queue does not slow down. With Rewardly the digital loyalty card lives in Apple Wallet or Google Wallet, guests add it from a QR code on the table in about 10 seconds and do not need to download an app.
- Double stamp days. Rewardly offers them on stamp cards in every plan. A guest who would otherwise stay home gets one more reason to come.
- The menu on their phone before they decide. With Rewardly you send a push notification with today's menu to every card holder, and you can schedule it for a specific date and time. Rewardly reports a 90% read rate for push messages. Push notifications are included in Advanced and higher plans and only reach customers who agreed to marketing messages.
- Know them. A greeting by name and "the usual?" mean more to a guest than a discount.
An example Friday message:
Friday here: chicken soup and beef goulash. Order by 10:30 and your lunch is ready to pick up.
Team lunches in the middle of the week
When everyone is in the office, teams want to go out for lunch together. That is your chance from Tuesday to Thursday.
- An offer for groups. A booked table for 6 to 12 people, a set menu, one bill for the company.
- Office celebrations. A colleague's birthday, a farewell, welcoming someone new. A cake to order.
- Go to them. A short offer for the assistants and the people who organise team events in nearby companies: they decide where the team goes.
- Lunch for a meeting. Takeaway ordered at once for the whole team.
A strong Wednesday will not fill Friday, but it evens out the week. For an owner, the whole week matters, not one day.
Go where people work from home
Someone working from home still needs lunch. Just not in the business district, but where they live.
- If you are in a residential area, remote work is your opportunity. Coffee to go in the morning, lunch for people with laptops, cake in the afternoon. Give them WiFi without asking for the password, for example with a free WiFi QR code, and set rules for laptops during the lunch rush.
- If you are downtown among offices, try pick up or delivery to nearby residential areas, but first work out what one delivery costs you.
- An empty Friday afternoon can be filled with one targeted offer for one slow hour. Pick one hour, one offer, and measure it for four weeks.
What not to do on Fridays
- A Friday discount for everyone. Tuesday guests learn to come only on Friday, and you sell the same for less. And a discount, once introduced, is hard to take back.
- Cooking as on Tuesday and throwing it away in the evening.
- Closing on Friday without doing the maths. If Friday covers ingredients and the shift's wages and leaves something towards rent, closing saves you less than you think. And regulars get used to going elsewhere.
- Changing Friday every week. Give one change four weeks, or you will not know what worked.
How to tell if the change worked
After four weeks, compare Fridays with the Fridays before the change: lunch receipts, average spend, waste, and what is left from the shift after ingredients and wages. Fewer guests with less waste and fewer people on the shift can be a better Friday than before. Watch the whole week too, not just Friday.
FAQ
Why are restaurants quieter at lunch on Fridays?
With hybrid work, people often take their home days at the start and end of the week, when there are fewer meetings. The offices around the restaurant are half empty then. How much your Friday drops shows up in your POS when you compare lunch receipts by weekday.
Is it worth closing for lunch on Fridays?
Only if your POS data shows that Friday lunch does not even cover ingredients and the shift's wages. Try smaller prep, a smaller menu and fewer staff first. A closed day teaches people to go elsewhere on other days too.
Should I discount the lunch menu on Fridays?
Better not across the board: guests learn to wait for it and move from other days. A different Friday dish, an offer for neighbours or a reward for regulars on a loyalty card works better.
How do I attract people who work from home?
Be where they live: pick up, delivery to nearby residential areas, or an offer for neighbours if you are in a residential area. Remote workers value fast takeaway, a quiet place with WiFi and a lunch they do not have to cook.
How do I make the most of busy office days?
Offer team lunches for groups, office celebrations and takeaway for meetings. Reach the people who organise team events in nearby companies. Strong midweek days even out a weaker Friday.
